Just over two decades ago, a culinary movement emerged in Tijuana that would go on to become one of Mexico’s most distinctive gastronomic expressions: BajaMed cuisine. This innovative approach brings together three major culinary influences—the richness of the Mediterranean, Asian heritage, and the fresh ingredients of Baja California—to create a cuisine with an identity all its own.

The result is a contemporary culinary style rooted in place. Traditional ingredients from northern Mexico, such as Cotija cheese and seafood from the Sea of Cortez, meet olive oil, aromatic herbs and wine from Valle de Guadalupe, while sweet-and-sour flavors and Asian sauces reflect the culinary traditions brought to Mexico by the Chinese community in Mexicali and the Japanese community in Tijuana.

MUST-TRY DISHES FROM BAJAMED CUISINE

Tempura Fish Tacos

Far more than a street-food classic, the fish taco is one of Baja California’s most iconic dishes. Made with fresh white fish such as cod, tilapia or dogfish, it is coated in a light tempura batter made with beer or sparkling water, resulting in an exceptionally crisp texture.

Served on a freshly made corn tortilla and topped with fresh cabbage, pico de gallo and a creamy chipotle dressing, it strikes the perfect balance between freshness and bold flavor.

 

Panko Shrimp Skewer

Inspired by Japanese culinary techniques, this shrimp skewer delivers a golden, crisp texture from the very first bite. The shrimp are seasoned with aromatic herbs and coated in panko for a light, delicate finish.

The presentation makes the experience even more distinctive: the shrimp are served over a sprig of local rosemary, accompanied by saffron aioli, crispy fried shallots, and dried chiles from Baja California.

Madagascar tuna

One of the great icons of BajaMed cuisine, Atún Madagascar features a cut of tuna that is lightly seared to preserve its freshness and delicate texture. It is paired with an intensely flavored Asian-inspired sauce made with nine varieties of chile and almonds, bringing together spicy, sweet and umami notes.
Avocado and cilantro add freshness and balance, resulting in a vibrant dish that captures the essence of BajaMed’s fusion philosophy.

Grilled Octopus over Chorreadas

Traditional chorreadas, also known as pellizcadas and closely related to the garnachas found in central Mexico, provide the base for one of Tijuana’s most representative dishes.

A grilled octopus seasoned with a chile and guajillo sauce is placed on top, enhancing its naturally smoky flavor. Cheese, avocado and crispy pork chicharrón complete this irresistible combination.

Grilled octopus with black mole

Mole is one of Mexico’s most emblematic culinary creations. In Baja California, it takes an unexpected turn in this bold fusion, pairing grilled octopus with a rich black mole inspired by the traditions of Oaxaca.

The result is a striking contrast between the flavors of the sea and one of Mexico’s most celebrated sauces. A creamy potato purée accompanies the dish, providing a gentle counterpoint to the mole’s intensity.

Octopus Chicharron

If you are a fan of octopus, Octopus Chicharron is another dish worth seeking out. Fried in olive oil and flambéed with tequila, the octopus is served over crisp tostadas for a dish with an unmistakably Baja character.

Its flavor is difficult to put into words, thanks to the combination of rosemary and árbol chiles, ingredients deeply connected to the region.
